I have a group of friends who like to get together frequently and I need some ideas and recipes for quick and easy party foods - dips, spreads, hors d'oeuvres, finger foods, etc.

I need to be able to keep all the ingredients on hand and be able to make them very quickly to take to short notice parties.

If you got a text at 10am while you were at work that said "Cocktails at my place tonight!" what would you make to take?

Does it have to be made from scratch? You can get nice party size sausage rolls frozen ready to bake, you just put them on a baking tray, brush them with a little milk and they take about 15 minutes to cook in the oven.

Things like tortilla chips are already ready to eat and keep in the bags in a cupboard.

How perishable do you not want? A very nice quick salad is to chop apples and cucumbers, mix with some mayo and a little mint sauce.

Another nice one is to chop tomatoes and mix with sweet chilli sauce. It makes something like a salsa.

Just remembered a good dessert - you make up some dream topping and mix it with broken meringue pieces and broken after eight mints. Better if you can freeze it too but then it wouldn't be quick. But if you have a lot of these dos you could have some ready in the freezer and just take it out.

Maybe not totally from scratch but, yeah, mostly from scratch. One of these women can whip out two different cheesecakes in the time it would take me to write the grocery list. I can't (and don't want to) compete with that but I'd like to make a decent showing.

Not perishable - if I could keep most of the ingredients on hand at all times and indefinitely then I could pick up one or two fresh ingredients (like the apples and cukes in your salad) after work as long as it didn't long to make. Or, like you say, having some things made in the freezer would be good.

I'm not sure I know what meringue pieces are?

I think you can buy "meringue" candies Lioness, or bake some meringue - but then it's not quick, or easy.

I'll have to dig through my stash of recipes and see what I can come up with. I'll let you know.

I'm looking forward to other recipes, new ones are always good to have on hand!

I did this for a church potluck once...it was "bring your favorite snack" night and I was worried that it would be nothing but sweets (and I was right!).

THe best part? It's only three ingredients!

Chili Cheese Tots
1 Package of frozen tater tots
1 -2 cans of chili
1 package shredded cheddar cheese.

Cook tots according to instructions in oven (preferable in a oven-proof casserole container). While that is cooking, heat up the chili (I prefer the microwave method).

After tots have finished baking, pour the heated chili on top. Sprinkle the cheese over the chili (or layer if you want to get fancy!), and place back in the oven long enough for the cheese to melt.

I have a tub full of mini meringues that I bought, you can also break up ready-made meringue nests. A very quick way to make your own meringues is to not bother whisking the eggwhites but just to keep on mixing icing sugar into them until you have a dough. Put balls of the dough on a microwave plate and cook on high for one minute and they're done! So so easy :)

Summertime is great for making Caprese salad:

Slice fresh, really red tomatoes.
Slice fresh mozarella cheese.
Plate the tomato slices.
Place a slice of cheese on top of each tomato slice.
Drizzle olive oil over the slice "stacks."
Sprinkle salt and pepper over all.
Add a small sprig of fresh basil to each "stack."

Variation:
Place the slices of tomato and cheese and the sprigs of basil in alternating layers.
Then drizzle the oil and sprinkle the seasonings.


My best friend even makes it for the annual Super Bowl party she hosts, so it's yummy year 'round... but I imagine that it's amazing with summertime tomatoes.

Meat balls--keep some frozen in the freezer, add a jar of grape jelly and a couple cups ketch--mmmm or do cocktail weiners the same way--Or a desert is peach cobbler--pour peaches in the bottom of a 9x13, sprinkle a dry cake mix on top dot with 1/2 stick of butter cut in chunks--bake 350 about 20 min until golden brown

Another thing you can do is fresh fruit with a yogurt dip. Here is a recipe I found from cooks.com

1 (7 oz.) jar Kraft marshmallow creme
1 c. raspberry yogurt
1 c. strawberry yogurt

Combine softened cream cheese and marshmallow creme. Mix until well blended. Add yogurt. Place dip in center bowl of dish and surround with fresh fruits.


Also, I've done the fruit tray w/ vanilla yogurt (healthier!!). If you want it to look "homemade", you can put the yogurt into a dish.

Mix a brick of cream cheese (soften for a few seconds in the microwave), a can of chili, and about a cup of shredded cheddar or mexican cheese blend. Pour into lightly greased casserole dish and pop into a heated oven (about 375 to 400 degrees) until heated thru and bubbly. Serve with tortilla chips.

Make the above recipe, except substitute shredded chicken breast and salsa for the chili - chicken enchilada dip!

A brick of cream cheese and a jar of salsa mixed together also makes a really good dip.

(Yes, I love dips. LOL.)

I have not tried these, but they sound easy and interesting-

Pretzels
Melt 1 stick of butter on a cookie sheet.
Add pretzels (it doesn't say, but I'd probably use "stick" pretzels) and mix to cover with the butter.
Bake 15 minutes at 250*

Flip the pretzels and sprinkle with Parmesan cheese and garlic salt.
Bake 15 minutes at 250*

Flip again, add more cheese and garlic salt.
Bake 15 minutes more.


I have done these and they are good.

Sausage Hors D'Oeuvres

2 lb Jimmy Dean uncooked "Hot" sausage (you could do 1 lb plain/1hot)
1 lb cheddar cheese, grated.
2 1/2 C Bisquick

Mix. Shape into small balls, place on baking sheet.
Bake 350* for 15-20 minutes.

Freezes well.
You can also leave the sausage frozen until needed, Bisquick keeps forever and cheese freezes Ok too.


This sounds good & easy

Zucchini Appetizers

3 C thinly sliced zucchini
1 C Bisquick
1/2 finely chopped onion
1/2 C Parmesan cheese
2 T Parsley
1/2 t salt
1/2 t seasoned salt
1/2 t oregano or marjoram
pepper
1 clove garlic, finely chopped
1/2 C oil
4 eggs slightly beaten

Preheat oven to 350*
Grease 9 x 13 pan.
Mix everything and spread in pan.
Bake until golden brown- about 25 minutes.

Cut into pieces (2" x 1") Serve hot. (which might be the only problem when taking somewhere)

I also like to bring Fruit Pizza

1 tube cut & bake Sugar Cookie dough - spread on a pizza pan- bake 8 - 10 minutes @ 300*. Cool

Filling:
8 oz cr cheese
3/4 C sugar
1 t vanilla

Mix and spread on cookie pizza.

Slice fresh fruit - Kiwi, strawberries, bananna etc. Blueberries/Raspberries are also good. Place on top of filling.

1 C Apple, Peach or Apricot jelly thinned with 1 T water - brush on top of fruit.


That's what I can think of so far, I'll see if I can think of any more...

My Favorite Dip

8 oz cream cheese, softened
Some ranch salad dressing
Hot wing sauce
1 can of breast of chicken

Blend cream cheese and chicken. Stir well.
Add ranch dressing til easy to stir...not sure how much. I just
eyeball it...then hot wing sauce to taste.
Chill and then serve with wheat crackers or a
variety of chips....

We love this!

OOPS! Sorry, Lioness.. I didn't read your OP thoroughly.

I have both a Kroger and a farmer's market not far from work, so I could go get fresh tomatoes from either place on my lunch break. But not everyone has options like those... so... lemme think of something else I'd take...




Chunky Black Bean and Corn Salsa

* Can of black beans
* Can of corn
* Lime juice (I imagine at least 1 T.)
* Chopped red onion (I get the package of stuff you can get in the produce area)
* Chopped bell peppers (yep, the package of fresh ... produce area... gotta love stuff that saves you time!)
* Parsley or cilantro
* Salt and pepper to taste
* Olive oil
* Tortilla or other corn chips for dipping

Toss ingredients in a bowl. (Amounts and proportions vary according to your taste. So just dump some, and keep adding until you like the mixture.) Marinate in fridge for as long as you can.

I wonder if adding something like cumin or other spice or herb found in Latino cooking would help as well.

Something similar to that would be oyster crackers (instead of pretzels) and a package of powdered ranch dressing mix and dill (instead of cheese and salt). The finished product is addictive!!


Pastry Sticks

Purchase pastry sheets (found in the freezer aisle of the grocery store, often near the frozen pie crusts and such), cut them into sticks (say, about 1/4 inch wide), place them on an ungreased baking sheet (the sticks can be right next to each other), and brush them with melted butter or margarine. (Wonder if spray butter or margarine would work just as well... but faster!) And then I sprinkle seasonings on top. Favorite has been Lawry's Season Salt and poppy seeds. But I've also done other herb & spice combos. Also have done a sweet version with cinnamon sugar.

These too are addictive.

Reading thru the other recipes reminded me of one of our very favorites for picnics -

Sandwich Spread

Soften a brick of cream cheese, mix well with one package finely chopped lunchmeat (ham, turkey, roast beef, whatever you like), about a cup of shredded cheese, about a cup of mayonnaise, and a package of dry ranch dressing mix. You can add more seasoning if you need it, I buy the big cannisters and just dump it in until it tastes right LOL. Serve on slices of french bread or other hearty bread, or with crackers.

Speaking of crackers, my mom makes something called Firecrackers that are absolutely addictive, they have canola oil and dry ranch mix and cayenne and I don't remember what else, all tossed together with saltine crackers. I'll try to remember to dig out the recipe and post it. They keep very well in the pantry for several days, I bet if you mixed them up and put them in the freezer they would be ready to go and keep for quite a while. They make a really good side cracker to go with salad too.

These are great! Y'all are really helping me, thank you!

I am totally making those pretzels (for me to eat at home ). I might share, it could happen.

These all sound so good and so simple. Perfect! I'll be glad for all the ideas I can get so please keep adding. Won't my friends be surprised when I show up each time with something different and delicious?!

Tapenade
2 plum tomatoes, seeded & chopped (or 1 can diced tomatoes drained slightly)
1/2 c kalamata olives, chopped
3-4 garlic cloves, minced
1 t rosemary
1/2 t oregano
s&p

I make my own pesto, freezing it in ice cube trays, so that I have pesto cubes to pull out and thaw. So I have one bowl of pesto, one bowl of tapenade and then an assortment of crackers or breads.

Or you can make them up yourself. I put the pesto on first and top with the tapenade.

And BTW, Elena, I love your recipe! I've made that years ago. . . but forgot about it. Now that I have basil in profusion, I'll be making those again. But I usually did mine on toasted bread and broiled or microwaved them to melt the cheese a bit. Thanks for reminding me!

Prosciutto and Basil Crostini

Baguette, cut diagonally into 1/2 inch slices--Option: lightly toast in oven
Fresh basil leaves, washed and dried
6-8 oz of very thin-sliced Prosciutto de Parma (slice should be translucent)
Whole milk ricotta
Coarse salt and fresh ground black pepper
Extra-virgin olive oil

On each bread slice:
Dizzle 1/2 teaspoon of olive oil
Sprinkle pinch of salt and pepper
Center leaf of basil
Schmear about a tablespoon of ricotta
Drape slice of prosciutto

A nice touch is basil-infused olive oil: Mince 2-3 tablespoons of fresh basil and add to 1/4 olive oil. Place in air-tight container and refrigerate for up to 1 month. It takes 2 days to macerate for flavor.

If I have warning, I make cheese crackers, but they aren't exactly quick.

How about some glazed nuts? Just take the nut of your choice (pecan halves are my personal favorite), beat up an egg white, then add salt and whatever spices strike your fancy (or sugar, cinnamon and maybe a little nutmeg) and mix it in with the egg. Stir in the nuts and toss 'en around to coat them, lay them out on a pan covered with parchment, then bake them @275* for ~ an hour, stirring then frequently.

If I have *no* time, I grab a brick of cream cheese and pour a small jar of red pepper jelly over it . It really does taste good on almost any cracker, and it looks pretty.

I am right now experimenting with recipes trying to find the perfect caramel dip. If and when I am satisfied with one, I think I will take that and cut up apples.

I love guacamole dip! You can usually buy those packets at the store along with an avocado (and whatever else the ingredients say...I forget!).

Also, earlier BelleWeather reminded me of something I did once in my wild and crazy bachelorette days. Lazy man's bruschetta.

I bought a loaf of frozen garlic bread, sliced them up. Then chopped up (diced) some tomatoes and sprinkled them on top, sprinkled with some parmesan cheese and lots of mozzerella cheese. Stick it in the oven until the cheese is nice and melted and voila.

I've noticed that a lot of my food ideas revolve around melted cheese. There's never anything wrong with that!

I've always had good feedback when I've brought Pickle Wraps.

Spread a thin layer of cream cheese on a slice of dried beef. Place a petite dill pickle on the cream cheese and roll it up. You could also do this with green onions or asparagus. I like the pickle version the best though.

I think that only works for guys, Dan. :D

I love this:

- thaw out frozen chopped spinach leaves; squeeze out water by putting in a bowl and putting another bowl (same size) on top and squeezing them together. I turn it sideways and push them against the side of the sink.
- add mayo until creamy
- add salt and lemon juice to taste
-serve with carrot and celery sticks

To make it really good, add canned artichoke hearts! Even people who hate spinach will hover this stuff up!

It never hurts to serve from a can or jar:

- black olives (pitted so you can put them on your fingers)
- little sweet pickles

Lioness, I was just looking at the new Aug/Sept Tast of Home magazine - there was an "after school snack" that made me think of you/this tread because it would be a good one to bring also.

Apricot Turkey Pinwheels

Spread 1/4 C apricot preserves onto a sheedt of puff pastry (which can be kept in the freezer).
S[prinkly eiwht 1/2 t ground mustard
Layer with 1/4 lb sliced deli turkey and 1/2 C shredded Monterey Jack cheese.
Roll up jellyroll style, cut 16 slices. Bake at 400* 15 minutes

They sound good and pretty easy! And I guess you could let the kids eat 'em after school too if ya really wanted to....


They'd be good with ham slices too.
